摘要：在许多实际问题中，训练数据的作用是不同的，通常有些训练数据比其他数据可能更重要。刻画每组训练数据的不同作用通常是通过给每个训练数据赋予一个置信权重来实现的，基于这样的模糊数据，本文还重新推导了经典的回归方法，以及在此相对情况下的模糊回归方法，并且分析了他们的统计性质。在模糊统计分析中求置信权重的传统方法是由设定的模糊隶属函数来确定的，如时间序列函数等。考虑到DEA分析方法在评价决策单元的相对有效性上有着不可低估的优越性，那么我们把DEA方法引进模糊统计分析中，与通常用的模糊隶属函数所确定的置信权重方法作比较，体现DEA分析方法在模糊统计领域中也具有优越性。

In fuzzy statistic analysis of the traditional methods are incredibly weight by setting the fuzzy membership functions, such as to determine the time sequence function etc. Considering the DEA method in the analysis of the relative effectiveness evaluation decision unit has not underestimate the superiority of the DEA method, then we introduce fuzzy statistic analysis, and usually use the fuzzy membership functions of the incredible weight determined comparing method, fuzzy statistic analysis method in DEA model is superior.

本研究的目的是臭豆腐卤水标准化生产的可能性的一种尝试。结合相关文献和考究，试验了六种不同的制作配方，采用混合培养法和微固相萃取—气质联机的方法测定发酵不同阶段微生物变化及最终的挥发性成分的差异性。试验结果表明：卤水中微生物的生长由迅速到缓慢，在发酵成熟阶段达到饱和并有下降趋势。黄豆加老卤水配方中的酵母菌由最初的＜10 CFU/mL增长至2.4×1013CFU/mL，乳酸菌也由0＜10CFU/mL增长到8.5×1013CFU/mL，细菌则由初始的4×104 CFU/mL激增到1.1×1014 CFU/mL，而不同配方的卤水中的微生物增长速率不尽相同，如酸菜水中酵母菌最终仅有2×105 CFU/mL，乳酸菌为9.2×1011CFU/mL，细菌则有4×1013 CFU/mL。分析结果表明，卤水主要气味成分有吲哚、醇类、酮类、酸类、酯类与少数几种酚类、硫醚类，7种配方中酯类有5种化合物相同，酸类4种，醇类4种，酮类6种。成品制作中，浸泡5h的臭豆腐与市面上产品最为类似。本实验区的一定进展的同时也存在成品色泽不足以及气味物质来源的根本原因不明的问题，有待进一步探究。
